Foody Friday: Remix

Our Foody Friday host has been on hiatus for a few weeks. I understand as I was on vacation the few weeks before that. I thought in place of a Foody Friday I might ask you, my readers, for some recipes.

I am growing a slew of tomatoes, both Big Boys and cherry ones in my garden this year. (I use garden as a loose term since I merely removed a bunch of shrubs from the sunny side of our house and am using the space to grow plants.) I also have two green bell pepper plants, a cucumber and a yellow/orange sweet pepper.

So here's the thing: using all or some of the ingredients - what recipes of yours come to mind? Maybe your recipe only uses one ingredient, but that's good enough for me. Maybe a homemade salsa or a stuffed pepper recipe. I am all ears, I guess eyes and then mouth eventually...

To get the ball rolling here is one that I have in the works...

Feta and Vegetable Rotini Salad

3 cups tricolor rotini pasta, cooked, drained and cooled
1 cup Crumbled Feta Cheese
1 cup halved cherry tomatoes
1 cup chopped unpeeled cucumber
1/2 cup sliced black olives
1/2 cup KRAFT Zesty Italian Dressing
1/4 cup finely chopped red onion

TOSS all ingredients in large bowl. Cover. Refrigerate at least 1 hour to blend flavors.

I also plan to toss in some small slices of pepper too!

I'm all about simple. Too many ingredients and steps and forget it, I'm lost. Here are my favorite simple salads.

Bread Salad

Focaccia bread, cubed
Fresh tomato, whatever size you want, I like about one inch pieces
Fresh Basil, chopped
Fresh marinated Mozzarella cheese balls (they come in a container in the deli section), I usually cut up the mozzarella balls into quarters

4 ingredients, that's it! You have to mix it all together right before serving or the bread gets soggy.

Here's another easy salad

Tomatoes, cut up
Cucumbers, cut up
Your favorite dressing (ranch or blue cheese works well)

3 ingredients, you can't beat that!
