Meatball Subs, sort of...

I am not a huge fan of meatball subs. In fact I have never ordered one out and about before only nibbled off a bite of someone else's to try it. However I do like a meatball from time to time with pasta. Thus this recipe in Family Circle turned my head recently.

If you know me you know I have a hard time following the directions so here are some things I did different just for your information...

1. I used ground beef - shame on me.
2. I only made a half batch as 24 meatballs could literally feed six to eight and we are two to three in our house.
3. I opted for Mozzarella cheese as my deli no longer sells freshly sliced Provolone.

We enjoyed them with fried potatoes and asparagus but they could really go with about anything. Let me know if you give them a try.
