What's For Dinner While Mom is Away?

My boys will be on their own for the weekend as I will be taking 10 fifth and sixth graders from The Edge to Camp Lebanon. I am excited for this adventure though a little leery of losing a whole weekend of sleep and coming back to reality of raising a two year old and running a home day care. I am sure you will hear how it all goes next week, but in the meantime I am cooking up some mean meals for the boys to have or have the leftovers from in my absence.

I have shared with you my Taco Soup recipe, my Chicken Pot Pie recipe, but I have failed to share this one with you:

Lasagna Roll Ups
  • 1/2 pound ground beef
  • 2 tablespoons chopped onion
  • 1 garlic clove, minced
  • 1 6 oz can tomato paste
  • 1 can (15 ounces) crushed tomatoes
  • 1/2 teaspoon salt
  • 1/2 teaspoon dried oregano
  • 1-1/4 cups cottage cheese
  • 1/4 cup grated Parmesan cheese
  • 1 egg, lightly beaten
  • 1 tablespoon minced fresh parsley or 1 teaspoon dried parsley flakes
  • 6 lasagna noodles, cooked and drained
  • 1/2 cup shredded mozzarella cheese

Directions:

In a skillet, cook beef, onion and garlic until meat is no longer pink; drain. Add tomatoes, salt, oregano; simmer for 10 minutes.
Spoon half of the meat sauce into a greased 9-in. square baking dish. Combine cottage cheese, Parmesan cheese, egg, parsley and onion powder; spread 1/4 cupful on each noodle. Carefully roll up and place seam side down over meat sauce. Top with remaining meat sauce. Sprinkle with mozzarella cheese. Cover and bake at 375° for 30-35 minutes or until heated through. Let stand 10 minutes before serving. Yield: 2 servings.


Notes: I have slightly doctored this recipe to meet my family's tastes. I find it is plenty to feed all three of us though the recipe says 2 servings. I also find that is makes plenty of sauce so I usually cook 8 noodles and fill and cover them all. Since more than six will not fit in a 9 in square pan, get creative.

Serve it up with a tossed salad and homemade garlic bread and you will have a new family favorite!
