Move Over IHop

Seth loves to use the hand mixer all by himself which he actually does very well. He beat the egg whites for the batter.

My boys love pancakes! We have actually never even been to IHop together but I cannot imagine a better pancake than the ones my mother-in-law makes. In fact they are the only pancakes I will even consume. (I think that might be related to a few too many church pancake feeds growing up but am not absolutely sure...) So here is the number one, all time, best recipe for pancakes. I promise that your family will love these ones!

Delicate Fluffy Pancakes

3 eggs, separated
1 2/3 cups buttermilk
3 tbsp. soft margarine
1 1/2 cups flour
1 tbsp. sugar
1 tsp. baking powder
1 tsp. baking soda
1/2 tsp. salt

Beat egg whites until stiff, set aside. Beat egg yolks, add all ingredients except egg whites. Beat until moistened, fold in stiff egg whites. Cook on hot griddle and serve with syrup.

I love a few chocolate chips in mine and blueberries are easy to throw in too. Get creative!

I wish I could tell you how much it made but we find the one recipe is enough to feed the three of us with no leftovers and Seth and J mom both eat two and dad eats whatever else there is. When you make the Mickey shapes and get creative it might seem to make more or less for your family. I would say experiment as leftover batter can always be put in the fridge and enjoyed a second time!

Seth likes his pancakes in long strips so he can dip them. He goes back and forth between Harry and David Triple Berry Syrup and maple syrup.

The pancakes are yummy!

Just as a side-note, we've actually frozen pancake batter with good success, so we always make a large batch. If you happen to be one of those "once-a-weekers" for pancakes, this works really well - just pull the batter out of the freezer the night before and save yourself some time the next morning.

Why cook when you can go to IHOP?? They even clean up after you (not that Jon & Owen need to be cleaned up after, of course).

Pancakes are a keeper...we'll have to try this sometime!

I was just wanting pancakes today! I don't make them that often, but I will have to try that recipe. Thanks for sharing it. Do you have to buy real buttermilk or can you use mock butter milk (milk/vinegar)?

I have always bought Buttermilk but I imagine you could mock it as in most recipes I hear it works. Let me know if you try it - I rarely buy buttermilk so that would be easy!
