Homemade Ice Cream (makes one gallon)

4 cups Heavy Whip Cream
6 beaten eggs
2 cups sugar
3 tsp. Vanilla (the real Watkins stuff if possible!)
1 tsp. salt
3 cups Milk
Whip cream until stiff and add beaten eggs and mix. Stir in sugar, vanilla, and salt. Pour into freezer and add milk. Freeze!
Obviously you need a one gallon ice cream maker for this. We have an Ice Mountain which we love and no we do not actually crank it, but you could if that is the kind of ice cream freezer you own. It is so much fun and one of our family traditions that was past to us from Jason's family.
This is a new topping that Nanny made us last time we made homemade ice cream in Nebraska. It is super yummy and slightly hardens on impact with the ice cream so it gets really gooey and melts in your mouth. It would be great on ice cream if you are not up to homemade!
Marshmallow Fudge Topping (makes about 1 1/4 cups)
1 cup brown sugar
1/4 cup dry cocoa
1/2 cup milk
1 tbsp. butter
1 tsp. vanilla
1 cup small marshmallows
Mix brown sugar and cocoa in saucepan; stir in milk. Cook and stir until mixture comes to boiling. Cook rapidly boiling 5 minutes longer. Remove from heat; stir in butter and vanilla. Cool five minutes and fold in marshmallows. Serve warm!
Now as if that all wasn't enough for you, we did serve up the ice cream and topping on Snicker Cake. This recipe I haven't made in years but it is so easy and the results are always so scrumptious.
Snicker Cake
1 German Chocolate Cake mix
1 jar caramel topping
3/4 cup chopped Walnuts (optional)
1 cup chocolate chips
Make the cake mix according to the package directions. Pour 1/2 the batter in a 9 x 13 in pan and bake at 350 degrees for 20 minutes. Pour on caramel mixture, chocolate chips, and walnuts if using. Pour on remaining batter and bake at 250 degrees for 20 minutes, and then 350 degrees for 10 more minutes.
Note: Caramel topping can be exchanged for 30 caramels, 1/3 cup milk and 3 tbsp. butter and melt it all in a microwave safe bowl.
