It's summer and it's Friday. Seth and I searched for a Spinkler Park this morning and finally just rerouted to the beach at Lake Johanna. We sat in the sand, bulldozed rocks and front-loaded water. It was a joyful time. I don't know about you but being in the water, or even near it for that matter, makes me so hungry!
I love summer food. The other night we grilled corn on the cob from the local farmers market and a ton of chicken with Famous Dave's Sweet and Zesty sauce. It was magnificent! Tonight is leftover chicken shredded on buns with a large fresh fruit salad and cucumbers from the garden. Yum!
Here is a new recipe we have loved and even toted on a recent picnic and family canoe night...

Sante Fe Grilled Chicken Salad Wrap
4 cups torn romaine lettuce
1 lb. Grilled Chicken Breast Strips (grilled in advance!)
1 large tomato, chopped
1 can whole kernel corn, drained
1/2 cup Shredded Cheese (we like Colby Jack)
1/4 cup Ranch Dressing
1/4 cup Salsa
8 Flour Tortillas (could use whole wheat or flavored too!)
TOSS romaine, chicken breast strips, tomatoes and corn in large bowl; sprinkle with cheese.
COMBINE dressing and salsa. Pour over romaine mixture; toss to coat. Spoon evenly onto tortillas; roll up.
