I enjoy caramel popcorn, but it makes so much that you really have to plan on making it when you can also give it away. That's what we are doing for Seth's preschool teachers this year. Today was the only day I really had time to do it so we made a batch...
Caramel Popcorn
22 cups popped popcorn
2 cups brown sugar
1/2 cup Karo syrup
2 sticks butter
1 tsp. salt
1 tsp. baking powder
Spread popcorn over two large cookie sheets. In saucepan over medium-high heat mix brown sugar, syrup, butter and salt. Boil five minutes and remove from heat. Stir in baking soda - will expand to almost double! Pour over popcorn and mix carefully. Put cookie sheets in oven at 200 degrees for one hour. Stir popcorn and rotate racks every fifteen minutes. Store in an airtight container and enjoy for weeks!

Ack! Does this mean I have to make something too???
Love the popcorn idea. I always do cookies for our teachers.
Thanks for posting this recipe! I think I am going to try it out this weekend...along with some other holiday cookie baking.
