
I am in my happy place: the kitchen. (Sorry if that sounds totally domestic, but I love to cook and bake and saute and slice and dice and...) With temps in the mid 60s today the weather was begging me to get busy in the kitchen and warm up the house.
I made a batch of Monster Cookies with Seth this morning. Ohh, yum and double yum! This afternoon (after an almost 2 hour nap - praise God) I am back at it. I made a super cinnamony batch of Homemade Granola and am in the middle of cooking down this yummy Homemade Spaghetti Sauce (See the 2nd recipe to cook a ton and freeze!) using my tomatoes fresh from the garden. The smell of the basil is about to kill me. I want pasta and sauce and more sauce!
Since the day is not over, I am making a cool cloudy day favorite for supper. Grilled cheese with tomato slices and thinly sliced onion (you'd think I had a lot of tomatoes on hand wouldn't you?!) and tomato soup of course. Then for dessert Homemade Apple Crisp with a scoop of vanilla ice cream.
Is your mouth watering yet?! I am drooling all over myself.
Here is the recipe for my Mother's Apple Crisp:
4 cups sliced apples
2/3 cup brown sugar
1/2 cup oatmeal
1/2 cup flour
3/4 tsp. cinnamon
3/4 tsp. nutmeg
1/3 cup butter
Line bottom of a 9x9 glass pan with apples. Fork all other ingredients until well mixed and cover the apples. Bake at 350 until apples are tender, about 30 to 45 minutes. Serve with Vanilla Ice Cream for extra sweetness!
