
This week I am going through more old cooking magazines. Going through magazines has turned out to be quite the process, but it is fun to come across old recipes and also find some new ones. Cheesy Meatball Skillet is one of those old recipes that made a come back last night. I used to make it a ton when Seth was little and in the finger food stage because he could eat all the little pieces, as I served the meatballs over noodles with peas on the side. Two of his favorites with the meatballs being something new, but very tender and easy to eat even with fingers. We enjoyed dinner, but Jason reminded me that this one can be easily overdone so I should put it in the back of the stack for another month or so. Why does it get overdone? It is so easy that even with the sides, dinner is on the table in 30 minutes or less. That ought to make it worth a try for any busy mom who needs an easy meal for her family!
