Jason has had a craving for his mother's Chocolate Pudding. After calling for the recipe over the weekend we finally got around to making it. It is amazing! If you are thinking that this will be difficult, try it anyway. I realize that mixing milk into a box mix is certainly faster, the taste difference is more than worth the extra effort. Of course the extra calories will just get burned off when you shovel the driveway again later this week...I hope.
Nanny's Chocolate Pudding
3 eggs
2 1/2 cups milk
1/2 tsp. salt
1/4 heaping cup flour
2 rounded tbsp. cocoa
1 rounded cup white sugar
Blend in blender until smooth. Transfer to microwave safe bowl and microwave for six minutes. Stir. Microwave for four more minutes. Stir. Thick and clumpy means done! (Every microwave is so different use your senses.)
Return to blender with
2 tbsp. butter
2 tsp. vanilla
and blend until runny.
Pour into desired bowl or dishes and cool until set. (Though Jason likes to have some still warm too.) Top with your favorite whipped topping and enjoy!

YUM! I definitely agree. Instant box pudding can't even compare to homemade pudding and the taste is definitely worth the extra effort and, dare I say it, calories! Also, if I have any hope of losing some extra pounds (per my New Year's resolution), I am going to have to stop reading your blog! :) You have way too many yummy recipes!
